Mattie Curtis opens the kitchen in Café 3001 well before the first breakfast is served at 6 a.m. Ms. Curtis has worked here for 31 years and despite having to wake up in the middle of the night for her early morning shift, she says she’s “blessed every morning that she can get up.” Here, she’s moving a steaming pan of meat for breakfast burritos.
